To check the IV in Pokemon Scarlet and Violet, you need to complete the game once (beat all 8 Gym leaders and the Elite Four).
After completing the game, go to any Pokemon Center and talk to the staff to unlock the Judge function.
Finally, look at one of your Pokemon boxes, hover over the Pokemon, and press the “+” button twice to check their IVs.
Here’s how to check the IV:
